Recipe of the Month - Fiery Avocado Spread
This spread is great in sandwiches, especially in a crusty roll with some fresh, crisp iceberg lettuce. Have some tortilla chips on the side!
Vegan and gluten free recipe.
1 small red chilli, finely chopped
1 tblsp lime
2 ripe avocados, peeled and stoned
1/4 cucumber, chopped small
2 tomatoes, grated*
1 clove garlic, crushed
small dash of tobasco sauce (optional)
salt and pepper
*Grate the tomatoes, by cutting them in half, then rubbing them on the large holes of a box grater, discarding the skin when all the flesh is grated.
Roughly chop the avocado and place in a bowl. Add the chilli, garlic and lime juice. Mash the avocado with a fork until fairly smooth.
Add the cucumber and tomatoes and mix well. Then add the tobasco, salt and pepper to taste, then mix well again.
